Step-by-Step Instructions

Marinate the Chicken

In a large bowl, combine chicken pieces with yogurt, red chili powder, garam masala, and salt. Mix well and refrigerate for at least 2 hours or overnight for best results.

Cook the Chicken

Grill or pan-fry the marinated chicken until cooked through with slight char marks. You can also cook in a preheated oven at 200C for 15-20 minutes. Set aside.

Prepare the Gravy Base

Heat butter in a pan. Add ginger-garlic paste and saute until fragrant. Pour in the tomato puree and cook for 10 minutes until oil separates.

Add Cashew Paste

Blend soaked cashews with little water to make a smooth paste. Add this to the gravy and cook for 5 minutes until well combined.

Combine and Finish

Add the cooked chicken to the gravy. Pour in fresh cream and add crushed kasuri methi. Simmer for 10 minutes. Adjust salt and finish with a dollop of butter.

Garnish with fresh cream drizzle and kasuri methi. Serve hot with naan, butter roti, or jeera rice for an authentic experience.
